Out of all the dessert recipes in the world, cake recipes are one of the most popular recipes. We love cakes for special occasions but also for snacking and dessert time. Cake has a very long history, and the work cake actually has Viking origins coming from Old Norse when it was called kaka. Then it was also popular with the ancient Greeks who called cake plakous, coming from the Greek word for flat which is plakoeis. Most cakes were baked using flour mixed with eggs, milk, nuts and honey which is not too different from how cakes are made today, but they are now made with cane sugar instead of honey. Although, you can use honey for a healthier alternative to refined white sugar. The Greek also created a cake called satura, which was a heavy flat cake recipe. Then, the Romans named cake placenta which was inspired by the Greek plakous. The Greeks used beer as a leavening agent, and they were also known to fry fritters in olive oil and made cheesecakes using goat's milk. In Rome, they would add butter, eggs and honey to their basic bread dough to create cake recipes and dessert recipes.

Some of the first cakes in England were basically bread as well. But the difference between a cake and bread was the round flat shape of the cake as well as the baking method where they would turn cakes over while cooking. Bread was always just simply left to bake without turning it at all. In Spain, during the Renaissance sponge cakes were created and leavened with beaten eggs which is more like the modern version of cake we all know and love. In America during the Great Depression, cake mixes started to become popular as well making it easier for people to bake cakes quickly at home. General Mills was one of the companies making these convenient cake mixes which were great for creating simple cakes. With the time saved on putting the cake together, people could then focus on decorating the cake with icing and other treats. Now, you can even buy the frosting in a can making the entire cake making the experience the easiest it's ever been. But there's still nothing like those cake recipes from scratch, and you can usually taste the difference too.

Although sometimes, you just don't have the time or energy to put together a cake recipe from scratch, so it's good that the boxed cake mixes exist. For this recipe, you'll need a box of yellow cake mix or lemon if you like a lemony flavour. You'll also need a box of instant lemon pudding mix, eggs, oil and Sundrop which is a citrus flavoured soda known for its high caffeine content. You will also make a glaze for this cake to finish it off and create a nice topping so that the cake isn't so dry when you eat it. For this glaze, you'll use some Sundrop once again with some powdered sugar, and vanilla extract. You can also use some lemon juice in place of the soda if you like or if you can't find it. First, you'll mix the box of cake mix with the oil, Sundrop and eggs until it's nice and smooth but don't overmix either. Then grease a bundt pan and pour in the batter and bake for 45-50 minutes. While the cake is baking make your glaze by mixing all of the ingredients together until smooth. Then take the cake out of the oven and allow it to cool and then carefully drizzle the glaze over top.***
